TOMATO BRUSCHETTA

There’s no better way to start your weekend mornings than with this traditional Italian appetizer. The Tomato Bruschetta, with its chirpy colours and refreshing taste, will instantly brighten up your day. Best of all, it’s extremely healthy too!

Ingredients

 

300g vine-ripened cherry tomatoes
Garlic 2-3 cloves
1 bunch of Basil leaves
Sea Salt (1/2 teaspoon)
French Baguette or Italian Ciabatta

Instructions

 

Step 1

Dice tomatoes into small chunks and place it in a medium bowl.
 
Step 2

Slice/tear basil leaves into thin strips. To slice the basil leaves, stack them on top of one another, roll them up, then cut into 3-5mm strips from one end to the other.
 
Step 3

Finely chop the garlic and fry it in pan with a drizzle of olive oil until lightly browned.
 
Step 4

Add the fried garlic, garlic infused olive oil from the pan, and basil strips to the diced tomatoes. Season with sea salt and mix loosely. Set aside in the refrigerator for 45 minutes.
 
Step 5

Slice the baguette or ciabatta into half-inch thick slices and toast them in the oven until golden brown. Once done, cut an additional clove of garlic into half and rub it over one side of the toast.
 
Step 6

Add the tomato topping onto the toast slices and finish with a drizzle of olive oil, balsamic vinegar, and more basil strips.
 
Serve!
