If you’re craving for something sweet and chewy but soft at the same time – you’re in the right place. These S’mores Cookies combine the best of both worlds: toasted marshmallows with chocolatey cookies. This dessert is perfect for movie and date nights, gatherings, or simply for satisfying a sweet tooth at home.

Unlike traditional s’mores using only crackers and marshmallows, this recipe adds a twist by using cookie dough to create a combination of crispy edges and gooey marshmallows. 

This recipe is a little different from the standard s’mores cookies too, as instead of using cookie dough as the main base, it is more like a reverse s’mores cookies!

Ingredients for S’mores Cookies

This recipe is for approximately 4 cookies.

  • 115g unsalted butter
  • 50g white sugar
  • 100g brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 190g all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • Graham crackers or Digestives
  • Marshmallows 

Optional:

  • Chocolate chips
  • Raspberry powder
  • Dark cocoa
  • Chocolate bar

We decided to double this recipe while making it to share with even more people!

Step-by-step guide to making S’mores Cookies

Step 1: Browning butter

Ensure your butter is not too cold from the fridge as it may splatter and easily burn.,

Tip 💡: Cut your butter into smaller pieces to brown more evenly.

Add your unsalted butter onto a pan and continuously stir it until brown specks have appeared. 

These brown specks are actually toasted milk solids, making it safe to add into your recipe as it provides the most amount of flavour. It’s edible and flavourable, so ensure you do not waste it away!

We used  Tecno TIH 3000 to brown the butter due to its 9-level power control for a more consistent heat!

Step 2:  Making cookie dough

For this step, you may use an electric mixer or use a whisk to mix.

Add your browned butter with white sugar and brown sugar and mix using a whisk.

Add in your eggs and vanilla essence and continue whisking.

Last but not least, we stirred in flour, baking soda, and salt, mixing it until it becomes a soft dough.

Step 3: Adding different flavours

This step is optional, and we decided to split our cookie batch into 3 smaller batches. 

1st Flavour: Chocolate Chips Cookie

We added in our chocolate chip cookies and folded it in.

2nd Flavour: Double Dark Chocolate Cookie

In a separate bowl, split the chocolate chip mix and add in cocoa powder to achieve the dark and rich flavours of a dark chocolate chip cookie.

3rd Flavour: Raspberry Cookies

We added raspberry powder and mixed it in together. If the dough becomes too dry after adding in the powder, add in a tablespoon of milk, slowly increasing the amount, till the dough becomes soft and pliable again.

Step 4: Setting the S’mores Cookie base

We kept the cookie doughs chilled for 30 minutes or more to solidate the butter and achieve an overall richer flavour in the cookies.

We placed graham cookies and marshmallows on top. Alternatively, you may add a chocolate bar piece under the marshmallow.

For a less sweet option, half the amount of marshmallows added to your base, or whip in some mini marshmallows in your cookie dough instead.

Once your cookie dough has been chilled, scoop your cookie dough into a round shape and cover the base you have made previously. Ensure the dough fully covers the marshmallow as the marshmallow might melt otherwise in the baking process. 

Step 5: Baking S’mores Cookies

Bake your cookies in the oven at 180ºC for 12 to 14 minutes at top heat.

We used Tecno’s 6 Function Conventional Built-in Oven TBO-860  to choose the right settings for s’mores cookies easily.

Step 6: Serve and Enjoy!

Let the cookies set in the oven for 10-15 minutes before taking it out.

Top it with some blueberries or chocolate bars for a sweet delectable treat and enjoy!

Tips for the best S’mores Cookies 

  • Use enough marshmallows 

Do not be afraid to add more marshmallows for that classic s’mores texture!

Marshmallows will melt significantly in the baking process, so adding more marshmallows will allow you to enjoy that soft gooey mess after baking.

  • Try different types of chocolate

Other types of chocolate will give different flavours and combinations that may suit you more. While we have tried normal and dark chocolate in our cookies, milk, or even semi-sweet chocolate can give totally different results.

  • Let it cool before removing

The melted marshmallow and cookies will be extremely hot right immediately after the timer goes off. Letting the s’mores cookies to cool down allows you to enjoy the whole piece without everything falling apart.

  • Exploring your favourite flavours!

Try pairing different flavours together, such as banana s’mores cookies with nutella toppings, or macadamia s’mores cookies with oreos! Don’t be afraid to try and experiment with different flavours, as cookies are very forgiving!
