Chocolate Chip Cookie

It’s Mother’s day weekend and what better way to surprise your mom or wife than with a sweet (well not that sweet, we bake with reduced sugar levels) homemade treat. After all, most people love chocolate and cookies right? Ok, who are we kidding, everybody loves chocolate and cookies!

Ingredients

 

220g salted butter
150g brown sugar
135g sugar
1tsp baking soda
1/2 tsp baking powder
2 eggs
390g all purpose flour
3/4 tsp sea salt
250-300g Dark chocolate chips or chopped dark chocolate 70%
15g vanilla extract (optional)

Instructions

 

Step 1

Add softened butter, brown sugar, sugar, baking soda, baking powder, and sea salt into a stand mixer and mix for around 3 minutes starting on medium and slowly progressing on to medium-high. Feel free to scrape down the sides along the way.
 
Step 2

While the mixer is on, slowly add in vanilla extract and eggs and continue beating on medium-high to high for another minute or so.
 
Step 3

Add flour and chocolate chips into mixture and continue mixing on medium until combined.
 
Step 4

Pre-heat oven to about 175-180 degrees celsius and portion about 58-60g of the cookie mixture into ball shapes. Place them onto an oven tray lined with parchment paper. With this portion, and oven tray should fit 5 cookies nicely (four at the corners and one in the middle). Do leave some space at the edges and between cookies for them to expand and flatten during baking.
 
Step 5

Bake for about 15 minutes. This will leave them crunchy on the edges and moist and chewy in the middle. Once done, the cookies would still be soft. Let it cool for around 3-5 mins and when they’re slightly firmer, transfer them to a wire rack to cool for another 15 mins. Now you’re ready to tuck in. If you’re not eating them right away, store them in a glass jar.
