With Singapore’s 50th birthday just around the corner, we’ve partnered with Jiaksimi.sg (yes, the good people from TheMEATMEN) to bring you one of Singapore’s all time favorite Zi Char dishes – Cereal Prawns.

Ingredients
10 Large prawns
1 tsp Salt
1 tsp Pepper
1/2 Egg
1 tbsp Plain Flour
1 tbsp Corn Flour
1 tbsp Sugar
20 Curry leaves
4 Chili Padi (chopped)
50 g Unsalted butter
1 tsp salt
1 cup Cereal
1 tsp chicken powder
1 tbsp milk powder
Instructions
Step 1
Cut and clean the 10 prawns
Step 2
Trim legs and devein prawns
Step 3
Add half a beaten egg
Step 4
Add 1/2 tsp salt, 1 tbsp plain flour, 1 tbsp corn flour
Step 5
Deep fry at 170 degrees C for 2-3 mins
Step 6
Drain and set aside
Step 7
Pluck 20 curry leaves
Step 8
Cut 4 chili padi
Step 9
Fill bowl with 1 cup cereal, and add 1 tbsp milk powder, sugar, 1 tsp salt and chicken powder, then mix
Step 10
Melt 50g of butter in pan, add curry leaves, then chili padi
Step 11
Add cereal mixture and fry
Step 12
Add prawns and mix well
