Ingredients

Ingredients List:

  • 230g sliced bananas 
  • 2 Tbsp brown sugar
  • ¼ cup plus 2 Tbsp granulated sugar
  • 5 large egg yolks
  • ½ tsp vanilla essence/extract
  • ¼ tsp kosher salt
  • 2.25 cups, or roughly 540g of heavy cream

Step-by-Step Recipe

1. Caramelise Bananas

Preheat the oven to 180º C with top heat on the grill setting and line the tray with a sheet pan. Slice bananas up and place sliced bananas on the prepared tray. 

Sprinkle with brown sugar, and broil for 7 minutes until caramelised.

  1. Blend
    After the caramelised bananas are ready, place them into a bowl/tall jar.
    Mash caramelised bananas together using a spatula or spoon.

Alternative: Blend the bananas until smooth using an immersion blender into a purée.

  1. Make Custard

Whisk together sugar, egg yolks, vanilla, and salt.
Mix in banana purée and heavy cream. Pour into a covered oven-safe container, covering it with oven-safe lid or cling wrap.

Tip 💡: Poke holes in cling wrap to retain moisture, allowing you to steam the pudding without drying it out completely.

  1. Cook
    Place in the oven and steam for 1 hour at 90ºC with rear heat.

Tip 💡: If the pudding mix is still watery, put it back into the oven for another 30 minutes.

  1. Chill & Serve
    Whisk until smooth, then refrigerate for at least 3 hours or leave it overnight.
    If needed, whisk in a little cold cream or milk before serving.

Once it’s chilled, you can either eat it by itself or add extra toppings!
