CHOCOLATE LAVA CAKE

If there’s a dessert which can make you salivate just by looking at it, this would be it. Here’s our version of what is arguably the world’s most popular chocolate dessert. Definitely a must try for chocolate lovers. Its simpler than it looks!

Ingredients

170g dark Chocolate (70% Cocoa)
115g unsalted Butter
55g sugar
1 tablespoons flour (all-purpose)
2 whole large eggs and 2 egg yolks (for small eggs, use 3 whole eggs and 2 egg yolks)
A pinch of sea salt
(Makes four 6-ounce cakes)

Instructions

Step 1

Heat oven to 210 degrees Celsius. Butter ramekins thoroughly and coat evenly with small amount flour or cocoa powder

Step 2

Melt butter with the chocolate over a double boiler and stir regularly until a smooth chocolate mixture is obtained.

Step 3

Using a mixer, beat the eggs, egg yolks, sugar, and salt at high speed until pale and thickened.

Step 4

Once done, fold the chocolate mixture into the egg mixture together with the flour. Fill ramekins with mixture to just below the brim and bake it in oven for 8-10 minutes. (As a gauge, remove from oven once the centre becomes relatively firm.)

Step 5

Next, remove from oven and let cakes cool for 45 seconds before carefully turning them over onto a plate. (Easiest way would be to place an inverted plate over the ramekins and turn them over).

Step 6

Serve with cocoa power, vanilla ice cream, berries, or ALL.

Lastly, cut open the cake and let the chocolate OOZEEEEE.
